On Sunday&#8217;s ham was typically served, so the leftovers and pork bones were slow cooked on Monday &#8216;washdays&#8217; by the women and served over rice for dinner. Red beans and rice is still a Monday tradition in bars, restaurants and homes in South Louisiana. Our Slow Cooker Red Beans and Rice Recipe is an easy recipe that combines the smokiness of the sausage, ham hock and the beans for a flavor that would make Satchmo proud!  Ingredients: 1 tablespoon olive oil 1 pound pork smoked sausage, cut into slices. 1 Ham Hock 1 large onion chopped 3 stalks celery, chopped 1 green bell pepper, chopped 2 garlic cloves, minced 1 pound red beans (Camellia Brand beans are preferred) 7 cups of water 1/2 teaspoon cayenne 1 bay leaf 1.5 teaspoon Creole seasoning salt chopped green onions for garnish (optional) Hot cooked rice  Directions for Crock Pot: 1. Rinse and sort beans 2. Add oil to a large heavy pot and heat to medium heat. 3. Add sausage and ham hock and sauté for 5-minutes. 4. Add onions, bell peppers, celery and garlic and sauté until soft. 5. Transfer meat and vegetables to the crock pot. 6. Add beans, water, cayenne and bay leaf to crock pot. 7. Stir to blend ingredients and set the slow cooker on high for 6-7 hours. 8. For a creamier consistency, drain some of the liquid and mash some of the beans. 9. Add salt, pepper to taste. 10.
