The dish combines the flavors of fresh squash, corn and tomatoes.  This recipe is property of GreatChefRecipes.com  Ingredients: 2 teaspoons olive oil 1/2 cup chopped onions 2 cloves garlic, minced 2 teaspoons diced jalapenos 3 sprigs fresh oregano, leaves left on the stem 1 cup 1/2-inch thick zucchini slices 1 cup 1/2-inch thick yellow squash slices 1 large tomato chopped (or you can substitute 1 cup of stewed tomatoes) 3/4 cup canned pinto beans, drained 1/2 cup corn kernels 1/2 cup shredded cheddar and/ or Monterey Jack cheese  Directions: 1. Heat oil in a large pot over medium-high heat. 2. Add onions, garlic, jalapenos and oregano and sauté (around 2-minutes). 3. Add zucchini and squash slices and sauté for 2-5 minutes. (You want the squash and zucchini to soften.) 4. Add remaining cheese except for cheese, bring to boil, cover and reduce heat to a simmer for 20-minutes (stirring on occasion.) 5. This recipe is property of GreatChefRecipes.com  Ingredients: 4 pounds skinless, boneless pork butt or shoulder 4 teaspoons salt 1 teaspoon black pepper 1 tablespoon dried oregano 1 tablespoon ground cumin 1 onion, cut into wedges 8 cloves garlic, smashed 2 limes, juiced 2 large oranges, juiced 3/4 cup Coke 2 bay leaves  Directions: 1. Ingredients: 4 Garlic cloves 1 teaspoon Kosher salt, plus a pinch 1 pound ground lamb 3 tablespoons grated onion 3 tablespoons chopped fresh flat-leaf parsley 2 tablespoons chopped mint 1 tablespoon ground coriander 1 teaspoon ground cumin 1/2 teaspoon ground cinnamon 1/2 teaspoon ground allspice 1/4 teaspoon cayenne pepper 1/4 teaspoon ground ginger Freshly ground black pepper Tzatziki (Get the recipe here)  Directions: 1. Smash the garlic cloves, top with a pinch of salt and use a mortar and pestle to form a paste. 2. In a large bowl mix the paste, 1 tablespoon salt, onion, parsley, mint and spices. 3. 					<description><![CDATA[[&#8230;] This Instant Pot Pulled Pork recipe is very easy and flavorful. The pork comes out very tender with a nice light smoke flavor. This dish takes around 1-hour and 15 minutes, but it tastes like it was smoked for a day!  Ingredients: 4 pound pork butt (boneless or bone in) 3 tablespoons light brown sugar 2 teaspoons salt 1 teaspoon ground mustard 1 teaspoon black pepper 1 teaspoon onion powder 1 teaspoon paprika 1/2 teaspoon garlic powder 1/4 teaspoon cayenne pepper 1.5 cups chicken broth 1 tablespoon Worcestershire sauce 1 teaspoon Mesquite flavored liquid smoke 2 tablespoons olive oil  Directions: 1. Trim fat from the pork and cut into 4 chunks. 2. Add all of the dry ingredients to a large bowl and mix well. 3. Add pork chunks and coat well. 4. Add olive oil to Instant Pot and set to sauté. 5. Once ready, add two pork chunks and brown all sides. 6. Once browned remove the chunks and brown the other two. 7. Once pork is browned, add 1/2 cup chicken broth. 8. Use a wooden spoon to deglaze the bottom of the pot, making sure to get all of the brown bits up. 9. Add remaining chicken broth, Worcestershire sauce and liquid smoke. 10. Place the pork into the pot, trying to space them out as much as possible. 11. Pressure cook on high for 60-minutes. 12. Let the pressure release naturally for around 20-minutes. 13. Remove the pork and shred with a fork. 14. Serve with the juices of the Instant Pot or with BBQ sauce. This dish takes around 1-hour and 15 minutes, but it tastes like it was smoked for a day!  Ingredients: 4 pound pork butt (boneless or bone in) 3 tablespoons light brown sugar 2 teaspoons salt 1 teaspoon ground mustard 1 teaspoon black pepper 1 teaspoon onion powder 1 teaspoon paprika 1/2 teaspoon garlic powder 1/4 teaspoon cayenne pepper 1.5 cups chicken broth 1 tablespoon Worcestershire sauce 1 teaspoon Mesquite flavored liquid smoke 2 tablespoons olive oil  Directions: 1. Trim fat from the pork and cut into 4 chunks. 2. Add all of the dry ingredients to a large bowl and mix well. 3. Add pork chunks and coat well. 4. Add olive oil to Instant Pot and set to sauté. 5. Once ready, add two pork chunks and brown all sides. 6. Once browned remove the chunks and brown the other two. 7. Once pork is browned, add 1/2 cup chicken broth. 8. Use a wooden spoon to deglaze the bottom of the pot, making sure to get all of the brown bits up. 9. Add remaining chicken broth, Worcestershire sauce and liquid smoke. 10. Place the pork into the pot, trying to space them out as much as possible. 11. Pressure cook on high for 60-minutes. 12. Let the pressure release naturally for around 20-minutes. 13. Remove the pork and shred with a fork. 14. Serve with the juices of the Instant Pot or with BBQ sauce.
