It&#8217;s the perfect dish for St. Patrick&#8217;s Day, or for a cold winters day. There is some prep work that needs to be done, so make sure you set aside 15-20 minutes for prep. The dish can also be served purely as a stew or over rice (which I prefer.)  Ingredients: 2.5 pound beef chuck 3 tablespoons olive oil 3 carrots, peeled 3 sticks of celery 3 garlic cloves, minced 4 cups baby Yukon gold potatoes (1.5 pounds) 1 teaspoon dried thyme 1 teaspoon ground black pepper 2.5 teaspoons salt 12 oz. Guinness 3 cups beef broth 1/4 cup tomato paste 2 bay leaves 2 tablespoons cornstarch 2 tablespoons water  Directions: 1. Trim beef of any fat and cut into 1-inch pieces. 2. Pat dry with paper towels and lightly season with salt and pepper. 3. Heat olive oil in a large Dutch oven or pot over medium-high heat. 4. Sear beef cubes on all sides, and once browned transfer to slow cooker. 5. Slice carrots and celery into 1/2-inch slices. 6. Chop onion and mince garlic. 7. Cut baby potatoes in half; and transfer all vegetables to slow cooker. 8. Sprinkle with salt, pepper and dried thyme. 9. In a separate bowl, whisk beef broth and tomato paste and pour mixture into the slow cooker. 10. Add Guinness and bay leaves; and cook on low for 8-hours or high for 4-hours. 11. When the time is up, whisk cornstarch and water in a separate dish and transfer to slow cooker. 12. Remove bay leaves and cook on low for 45-minutes.
