[…] Our Slow Cooker Cornish Game Hens recipe produces a very juicy and flavorful bird that is flavored with olive oil and an herb rub. This is a delicious and easy recipe to make! Ingredients: 1 tablespoon kosher salt 1/2 tablespoon paprika 1/2 teaspoon ground cardamom 1/2 teaspoon basil 1/2 teaspoon oregano 1/2 teaspoon sage 1 1/2 teaspoon black pepper 1 tablespoon onion powder 1/4 cup olive oil 2 Cornish game hens 1/2 cup chicken broth Directions: 1. In a small bowl, combine the salt, paprika, cardamom, basil, oregano, sage, black pepper, onion powder. 2. Rub game hens with oil. 3. Rub the game hen on the inside and outside with the dry rub. 4. Place hen in slow cooker and pour the broth into the crockpot. 5. Cook on high for 3-hours or on low for 5-hours. 6. Let it sit at least 5-minutes before taking it out and serving. Wine Pairings: We preface all of our wine pairing suggestions by letting you know that it’s really a matter of personal taste. While we do offer our opinions and why we selected a specific varietal, there is no right or wrong answer when pairing a wine with your dinner. Chenin Blanc Wine This slow cooker Cornish Game Hen recipe goes great with a good dry crisp white wine with nice minerality. We suggest pairing this dish with a Chenin Blanc. A Chenin Blanc is a dry white wine with flavors of quince, yellow apple and pear. The flavors and herbal notes pairs well, and the creamy minerality is the perfect accompaniment.
[…] Our Crock Pot Rosemary Cornish Game Hen Recipe is a foolproof way to cook super tender Cornish Game Hens! The hens come out super juicy and are flavored with the combination of garlic and rosemary. This is a great ‘set it and forget it’ recipe! Ingredients: 2 Frozen Cornish game hens 1 large onion, rough chopped 8 cloves garlic, rough chopped 3 tablespoons olive oil 1 teaspoon salt 1 teaspoon ground pepper 2 teaspoons granulated garlic 2 teaspoons granulated onion 4 fresh sprigs rosemary 1/4 cup white wine Directions: 1. Sprinkle bottom of crock pot with half of the salt and pepper. 2. Drizzle 1-tablespoon olive oil over bottom of pot. 3. Add onion. 4. Place hens on top of onions. 5. Drizzle with 2-tablespoon olive oil. 6. Add garlic (1/2 on the hens, then the rest around them.) 7. Season with salt, pepper, garlic, onion seasoning and top with fresh rosemary. 8. Add wine and cook on low for 6-hours. If you want crispy skin, you can finish it in a 450F oven, until the skin crisps. Be careful not to dry out the hen though!
[…] Tonkatsu is a Japanese dish that consists of breading and deep-frying a pork cutlet. Our Tonkatsu recipe uses the oven to bake the pork and we serve it over a ginger-lime cabbage slaw. The flavors of this dish meld well with each other and this is an easy recipe to create. Ingredients: 2 large eggs 2 cups panko 2 tablespoons olive oil 1 lb. pork tenderloin, trimmed and cut into 8 pieces, then pounded to about 1/8″ thick Kosher salt Freshly ground black pepper 2 tablespoons rice wine vinegar 2 tablespoons fresh lime juice 1 tablespoon grated peeled fresh ginger 1 teaspoon honey 1/2 small green cabbage, cored 2 scallions, thinly sliced on a diagonal Directions: 1. Heat oven to 450F. 2. In a shallow bowl, beat the eggs. 3. On a large plate, combine panko and oil. 4. Dip pork cutlet into egg, let any excess drip off. 5. Then dredge cutlet into the panko to coat. 6. Transfer to a rack set in a rimmed baking sheet. 7. Repeat for all cutlets and roast for 30-minutes (until golden brown.) 8. Once done sprinkle cutlets with 1/4 teaspoon salt. 9. In a small bowl, whisk together vinegar, lime juice, ginger, honey, 1/2 teaspoon salt and 1/2 teaspoon pepper. 10. Thinly shave cabbage. 11. In a large bowl, toss cabbage with vinaigrette and scallions. 12. Serve with cutlets.
[…] Swordfish is often looked over, but the truth is swordfish steaks taste great on the grill! Preheat the grill to direct high heat (450-550 F). 2. Whisk the oil, mint, lemon juice, basil and garlic in a medium bowl to blend. 3. Season the mixture with salt and pepper to taste. 4. Brush the swordfish steaks with tablespoons of the lemon/ olive oil mixture. 5. Grill the steaks cooking times below. -1/2″ thick (6-8 minutes) -1″ thick (8-10 minutes) -1 1/4″ thick (10-12 minutes) 6. Once done transfer the steaks to plates and spoon the remaining sauce over the swordfish and serve. Pinot Grigio Wine This grilled swordfish recipe produces great grilled flavor with nice acidity and sweetness. With the citrus and sweet, I would suggest a Pinot Grigio. The wine pairs perfect with this dish as it has nice acidity to balance the flavors of the swordfish.
[…] Cod is a nice firm white fish with a fresh taste. This baked cod recipe brings out the flavors of the fish and is nice and light (not using any butter.) The lemon, tomatoes and garlic really accentuate the flavor of the cod. Ingredients: 4 cod filets (about 1-inch thick) Kosher salt Fresh ground black pepper 4 tablespoons olive oil (plus a little more for the pan) 1 cup cherry tomatoes 1 lemon sliced (plus more for garnish) 2 garlic cloves, smashed but not peeled 2 sprigs of Thyme Directions: 1. Preheat oven to 400 degrees. 2. Pat cod filets with a paper towel until dry and season both sides with salt and pepper. 3. In a large bowl combine olive oil, tomatoes, lemon slices, garlic and thyme. 4. Brush baking pan with olive oil and pour in oil-tomato mixture. 5. Nestle cod into baking pan among the tomatoes, lemons and garlic and bake for 15-minutes. **Check with a fork, as cod should easily flake. If not, cook a little longer.
[…] This Grilled Clams recipe is a very basic easy recipe. It can be easily doctored up with lemon, butter, garlic or one of your favorite own favorite sauces. Ingredients: 2 pounds littleneck cleaned clams Lemon Directions: 1. Heat grill to high. 2. Place clams on a portable grill rack and cover lid, grilling 6-8 minutes. (Clams are done once they have opened) 3. Transfer open clams from grill, try not to spill any liquid as that is where the flavor is. Wine Pairings: We preface all of our wine pairing suggestions by letting you know that it’s really a matter of personal taste. While we do offer our opinions and why we selected a specific varietal, there is no right or wrong answer when pairing a wine with your dinner. Chenin Blanc Wine This Grilled Clams recipe keeps the clams very fresh tasting. When it comes to shellfish my go to wine is always a Chenin Blanc. I feel that France produces some of the best white wines in the world and I enjoy the crispness of the wine with this grilled clams dish. A fresh dish, deserves a clean fresh tasting wine!
[…] This Crab Louie Salad recipe combines the crunchiness of the Iceberg lettuce with the smooth flavors of the crab meat. Crab Louie salad, also known as Crab Louis salad, is the King of Salads! The recipe dates back to the early 1900’s and originated on the West Coast where Dungeness crabs are the star of the show in this wonderful dish. Ingredients: 1 cup mayonnaise 1⁄4 cup ketchup 1⁄4 cup sweet pickle relish 2 tbsp chopped black olives 1 small white onion, peeled and minced Salt and freshly ground black pepper 1 head iceberg lettuce Meat from 2 cooked 2-lb. Dungeness crabs 1 lemon quartered Directions: 1. Mix together mayonnaise, ketchup, sweet pickle relish, olives and onions in a small bowl. 2. Season with salt and pepper to taste. 3. Refrigerate dressing until ready to use. 4. Core, wash and dry lettuce, then slice into shreds. 5. Place in a bowl and toss with 1-cup dressing. 6. Divide lettuce among 4 plates, placing 1 cup crabmeat over lettuce on each plate. 7. Spoon a bit of remaining dressing over crabmeat. 8. Serve with lemon wedges and hot sauce if desired. *The Crab Louie Salad tastes great with the quartered lemon juiced over the crabmeat. Wine Pairings: We preface all of our wine pairing suggestions by letting you know that it’s really a matter of personal taste. While we do offer our opinions and why we selected a specific varietal, there is no right or wrong answer when pairing a wine with your dinner. Chenin Blanc Wine The Crab Louie Salad recipe goes great with a crisp French white wine. I am a bit of a sucker for a good Chenin Blanc, and I feel that the cool, crisp wine, pairs perfectly with the richness of the crab and dressing. While the Iceberg lettuce keeps the Crab Louie Salad fresh, the wine will add to the freshness of the dish and is a can’t miss selection!
[…] This Steamed clams recipe is an easy dish to make, where you allow the clams to steam in their own “liquor”. This recipe tastes fresh, as it combines butter, white wine, lemon and herbs, what more can you ask for? Ingredients: 3 lbs. Clams 4 tablespoons Butter 4 Garlic Cloves, diced 1/2 cup Onion 1 cup Dry White Wine (Pinot Grigio or Sauvignon Blanc) 2 tablespoons Parsley, fresh chopped 2 tablespoons Cilantro, fresh chopped 2 tablespoons Chives, fresh chopped 2 Lemons Red Pepper Flakes Salt Directions: 1. Fill a large bowl with cool water and soak the clams for 20-minutes. 2. Scrub the clams to clean them. 3. In a large sauté pan, melt butter on medium-high heat. 4. Add garlic, onion, salt and red pepper flakes and cook for 1-2 minutes. 5. Add wine and clams, cover and cook for 3-6 minutes (depending on the size of clams.) 6. Once clams are opened transfer to a bowl and ladle cooking liquid over clams. 7. Sprinkle with parsley, cilantro, chives and lemon. 8. Serve with a side of French bread or Sourdough for dipping. Wine Pairings: We preface all of our wine pairing suggestions by letting you know that it’s really a matter of personal taste. While we do offer our opinions and why we selected a specific varietal, there is no right or wrong answer when pairing a wine with your dinner. Chenin Blanc This steamed clams recipe is a nice light fresh tasting seafood dish. With these types of dishes I tend to go for a Chenin Blanc. I love a crisp French white wine with fresh seafood, as it’s the perfect accompaniment!
