					<description><![CDATA[[&#8230;] Our Seared Cod with Chive Butter Sauce recipe is a delicious way to cook cod. The panko gives it a nice texture, while the chive butter goes great with a flaky white fish. This is an easy recipe to make, but it&#8217;s decadent!  Ingredients: Fish 4 Cod fillets (6oz. each) Panko bread crumbs 2 eggs Kosher salt Freshly cracked black pepper 4 tablespoons grapeseed oil 1/2 lemon, juiced 1 tablespoon butter 1 sprig fresh thyme  Butter Sauce 2 cups white wine 2 sprigs fresh thyme 1 shallot, sliced 2 garlic cloves, smashed 2 tablespoons heavy cream 1/2 lemon, juiced 2 tablespoons cold butter 3 tablespoons chopped chives Freshly cracked black pepper  Directions: Butter Sauce 1. In saucepan, add wine, thyme, shallot and garlic. 2. Simmer and allow the wine to reduce. 3. Once the sauce is reduced to a syrup, strain, add heavy cream, and lemon juice and bring to a slight simmer. 4. Whisk in cold butter and once melted add the fresh chives and season with black pepper.  Fish 1. Preheat oven to 400F. 2. Place the fillets on a baking rack to release its natural juices. 3. Add the bread crumbs to a shallow dish. 4. In a separate shallow dish add 2 beaten eggs. 5. Season both sides of the fillet with salt and pepper. 6. Once seasoned, brush the belly side of the fish with the egg. Skin side will be darker, the belly side will be lighter in color and flaky. 7. Dip the egg side into the bread crumbs. 8. In a cast iron skillet add grapeseed oil, and make sure that the pan is piping hot. 9. Sear only 1 side of the fish (the side with the bread crumbs). 10. Once 1 side is seared, place the skillet in the oven for about 3 to 4 minutes until cooked. 11. Once the fish is cooked, flip it over and add the lemon juice, butter and thyme. 12. Let it melt and baste the fish with the juice. 13. Pour the butter sauce over the panko and serve. 			<content:encoded><![CDATA[<p>[&#8230;] Our Seared Cod with Chive Butter Sauce recipe is a delicious way to cook cod. The panko gives it a nice texture, while the chive butter goes great with a flaky white fish. This is an easy recipe to make, but it&#8217;s decadent!  Ingredients: Fish 4 Cod fillets (6oz. each) Panko bread crumbs 2 eggs Kosher salt Freshly cracked black pepper 4 tablespoons grapeseed oil 1/2 lemon, juiced 1 tablespoon butter 1 sprig fresh thyme  Butter Sauce 2 cups white wine 2 sprigs fresh thyme 1 shallot, sliced 2 garlic cloves, smashed 2 tablespoons heavy cream 1/2 lemon, juiced 2 tablespoons cold butter 3 tablespoons chopped chives Freshly cracked black pepper  Directions: Butter Sauce 1. In saucepan, add wine, thyme, shallot and garlic. 2. Simmer and allow the wine to reduce. 3. Once the sauce is reduced to a syrup, strain, add heavy cream, and lemon juice and bring to a slight simmer. 4. Whisk in cold butter and once melted add the fresh chives and season with black pepper.  Fish 1. Preheat oven to 400F. 2. Place the fillets on a baking rack to release its natural juices. 3. Add the bread crumbs to a shallow dish. 4. In a separate shallow dish add 2 beaten eggs. 5. Season both sides of the fillet with salt and pepper. 6. Once seasoned, brush the belly side of the fish with the egg. Skin side will be darker, the belly side will be lighter in color and flaky. 7. Dip the egg side into the bread crumbs. 8. In a cast iron skillet add grapeseed oil, and make sure that the pan is piping hot. 9. Sear only 1 side of the fish (the side with the bread crumbs). 10. Once 1 side is seared, place the skillet in the oven for about 3 to 4 minutes until cooked. 11. Once the fish is cooked, flip it over and add the lemon juice, butter and thyme. 12. Let it melt and baste the fish with the juice. 13. Pour the butter sauce over the panko and serve. Ingredients: 4 boneless skinless chicken breasts Kosher salt Freshly ground black pepper 1 cup blue cheese, crumbles 4 teaspoons fresh chives 12 slices bacon, good-quality center cut 1 tablespoon extra virgin olive oil Toothpicks  Directions: 1. Heat oven to 400F. 2. Butterfly the chicken breasts by cutting across the breast, but not all the way through. 3. Open the breasts up, and pound lightly with the flat side of a meat mallet. 4. Season chicken with salt and pepper. 5. Cover the breasts with blue cheese crumbles and chives. 6. Close the flap back and wrap the outside firmly with bacon. 7. Use toothpicks to secure the bacon and help keep the chicken breast closed. 8. Heat the olive oil in an oven proof skillet over medium-high heat. 9. Brown the chicken for 6 minutes (3 minutes per side). 10. Transfer oven proof skillet to the oven and cook for 30-minutes. 11. Allow chicken to rest for 5-10 minutes. Ingredients: 1 tablespoon unsalted butter Extra-virgin olive oil 4 anchovy fillets, chopped 1/4 teaspoon crushed red pepper 1 tablespoon pine nuts 4 teaspoons chopped capers 4 Picholine olives, pitted and finely chopped 1 tablespoon freshly squeezed lemon juice Salt Four 6-ounce opah steaks, cut 1 inch thick  Directions: 1. In a saucepan, melt the butter in 1 tablespoon of olive oil over medium heat. 2. Cook until the butter browns slightly (2-minutes). 3. Add the anchovies, crushed red pepper, pine nuts, capers, olives and lemon juice and cook for 1-minute. 4. Season with salt and remove from heat. 5. Preheat the grill to direct high heat (450-550 F). 6. Rub the opah with oil and season with salt. 7.
