Our Enchiladas Suizas Recipe combines these ingredients to make a creamy light tasting sauce that pairs well with the chicken.  Ingredients: 8 tomatillos 2 serrano peppers 1/4 white onion 1 garlic clove 1/2 cup Mexican crema 1/2 cup chopped fresh cilantro 12 corn tortillas Vegetable Oil 2 cups shredded cooked chicken 1/4 teaspoon onion powder 1/4 teaspoon garlic powder 1/4 teaspoon Kosher salt 1/4 teaspoon freshly ground black pepper 1 cup shredded Oaxaca cheese  Directions: Salsa Verde 1. In a large saucepan, bring tomatillos, serranos, white onion, garlic and 4 cups water to a boil. 2. Reduce heat and simmer for 15-minutes (until tomatillos are tender.) 3. The traditional Coq au Vin recipes use red wine; however, there are derivations to the classical dish. One variation is Coq au Vin Blanc, chicken with white wine. Our Coq au Vin Blanc recipe uses a dry white wine and pairs well with this dish.  Ingredients: 3 lbs. chicken (we like to use chicken breasts, as it&#8217;s easier to eat and not as messy) Kosher salt Freshly ground black pepper 2 tablespoons unsalted butter 4 bacon strips, diced 1 large sweet onion, diced 6 garlic cloves, minced 1 pint cremini mushrooms, sliced 2 cups dry white wine 1 tablespoon whole-grain mustard 1/2 cup heavy cream 1/4 cup chopped fresh parsley  Directions: 1. Pat chicken dry, and then season with salt and pepper. 2. In a large skillet, melt the butter over medium heat. 3. Add the chicken to the skillet and brown (4-minutes/ side). 4. Remove the chicken from the skillet and set aside. 5. Add the bacon the skillet and sauté for 3-minutes. 6. Add the onion and sauté for 5-minutes. 7. Add the garlic and mushrooms and sauté for 5-6 minutes. 8. Add the chicken back to the skillet. 9. Add the wine and mustard and stir to combine. 10. Cover the skillet and simmer on medium-low for 20-minutes. 11. Uncover the skillet and add the cream. 12. Simmer for 10-minutes. 13. Garnish with parsley and serve. The traditional Coq au Vin recipes use red wine; however, there are derivations to the classical dish. One variation is Coq au Vin Blanc, chicken with white wine. Our Coq au Vin Blanc recipe uses a dry white wine and pairs well with this dish.  Ingredients: 3 lbs. chicken (we like to use chicken breasts, as it&#8217;s easier to eat and not as messy) Kosher salt Freshly ground black pepper 2 tablespoons unsalted butter 4 bacon strips, diced 1 large sweet onion, diced 6 garlic cloves, minced 1 pint cremini mushrooms, sliced 2 cups dry white wine 1 tablespoon whole-grain mustard 1/2 cup heavy cream 1/4 cup chopped fresh parsley  Directions: 1. Pat chicken dry, and then season with salt and pepper. 2. In a large skillet, melt the butter over medium heat. 3. Add the chicken to the skillet and brown (4-minutes/ side). 4. Remove the chicken from the skillet and set aside. 5. Add the bacon the skillet and sauté for 3-minutes. 6. Add the onion and sauté for 5-minutes. 7. Add the garlic and mushrooms and sauté for 5-6 minutes. 8. Add the chicken back to the skillet. 9. Add the wine and mustard and stir to combine. 10. Cover the skillet and simmer on medium-low for 20-minutes. 11. Uncover the skillet and add the cream. 12. Simmer for 10-minutes. 13. Garnish with parsley and serve. Ingredients: 1 lemon, zest removed with a vegetable peeler, halved, divided 1 cup white wine vinegar 3 tablespoons sugar 3 tablespoons salt 6 cups water 1 lb. jumbo shrimp, peeled, deveined 2 celery stalks, chopped 3/4 cup heavy cream 3 tablespoons finely chopped fresh dill, plus more for serving Freshly ground black pepper 1 head butter lettuce  Directions: 1. Combine lemon zest, vinegar, sugar, salt and 6 cups of water in a large pot. 2. Squeeze in juice from 1/2 lemon and bring to a rolling boil. 3. Remove pot from the heat and add shrimp. 4. Let it sit until the shrimp is opaque (3-4 minutes). 5. Use a slotted spoon and transfer shrimp to a plate and chill in the freezer until cool (10-minutes). Ingredients: 1 cup all-purpose flour for dredging, seasoned with salt and pepper 1.5 to 2 pounds Chilean Sea Bass fillets 2 tablespoons butter 2 tablespoons olive oil 1 cup dry white wine 1 tablespoon butter, softened 2 tablespoons drained capers  Directions: 1. Place flour in a shallow bowl for dredging. 2. Pat fillets dry with a paper towel 3. Dredge each fillet in flour shaking off the excess. 4. Heat a large nonstick skillet over medium heat for 4-minutes. 5. Add olive oil along with 2 tablespoons butter. 6. Add the fillets and increase the heat to high. (Make sure fillets do not stick to pan.) 7. Cook for 3-minutes per side (total cooking time of 6-minutes.) 8. Remove fish from pan and deglaze with white wine. 9. Bring water to a boil. 2. Add salt and pepper. 3. Add grits and cook until water is absorbed (20-25 minutes.) Make sure you stir occasionally to avoid sticking or lumpy grits. 4. Remove from heat and stir in butter and cheese. 5. Fry bacon. 6. Once bacon is done, put on a paper towel lined plate to drain. 7. Reserve 3 tablespoons bacon grease, and add the shrimp and sauté. 8.
