This recipe is property of GreatChefRecipes.com  Ingredients: 1 garlic bulb, roasted Roasted Garlic Recipe (Get the recipe here) 3 tablespoons plus 1 teaspoon extra-virgin olive oil, divided 1 beef tenderloin, 3.5 to 4 pounds 3 tablespoons whole pink peppercorns 2 tablespoons rosemary, finely chopped 2 teaspoons kosher salt 1/2 teaspoon freshly ground black pepper  Directions: 1. Squeeze the garlic into a small bowl, discarding the skins. 2. Add the oil and mash the garlic and oil together with a fork to form a paste. 3. Trim the tenderloin of any excess fat and silver skin. 4. Spread the paste on the tenderloin, rubbing it into the meat. 5. In a small bowl combine the peppercorns, rosemary, salt, and pepper. 6. When you search online for recipes you will find overly complex seasoning which goes against the simplicity of Brazilian BBQ. The traditional cut of meat used is the Picanha, which is a top sirloin cap. If you can&#8217;t get a Picanha/ top sirloin cap, you can use top sirloin steaks as long as it has a fat cap on one side. Our Brazilian BBQ Steak Recipe is VERY easy to make, and you will be hooked much like I am!This recipe is property of GreatChefRecipes.comIngredients:Picanha steak (cut into 1-1.5&#8243; thick steaks)Rock saltDirections:1. Fold each steak into a &#8216;C&#8217; shape with the fat on the outside.2. Slide a metal skewer through the steak and repeat with additional steaks.3.
