[…] Barbacoa is a term used to describe the preparation of meat (sheep, goat or beef) that is steam cooked in an underground oven. Today the term can include slow cooking meats on the stove or slow cooker. Our Slow Cooker Barbacoa Beef recipe is an easy dish to make, and it delivers big flavors! We use smoky chipotles, cumin and oregano to flavor this shredded beef dish for your tacos, nachos or burritos! This recipe is property of GreatChefRecipes.comIngredients:4 pounds chuck roast, cut into large cubes4 garlic cloves, minced2 teaspoons salt1 teaspoon black pepper2 teaspoons cumin1.5 teaspoons Mexican oregano1 bay leaf2 canned chipotle pepper1 tablespoon adobo sauce from chipotle pepper can1 cup beef brothFresh chopped cilantroDirections:1. Place the meat in the slow cooker.2. Add garlic, salt, pepper, cumin, oregano, bay leaf, chipotle, adobo sauce and beef broth. 3. Stir to combine.4. Cook on low for 8-hours or on high for 4-hours.5. Shred the meat, remove the bay leaf and top with cilantro.Wine Pairings:We preface all of our wine pairing suggestions by letting you know that it’s really a matter of personal taste. While we do offer our opinions and why we selected a specific varietal, there is no right or wrong answer when pairing a wine with your dinner.Beaujolais Nouveau WineThis Slow Cooker Barbacoa Beef recipe is a nice bold dish. I would prefer a lighter red wine to compliment the dish, as you don’t want anything that is overpowering. A Beaujolais Nouveau is a young fresh red wine that is meant to be enjoyed young. Since it’s not complex, offers light fruit flavors and is a little dry, which melds well with this dish!
[…] Our Sausage, Kale and Bean Rigatoni Recipe does not use a red sauce. The beans break down to form a nice coating on the pasta, while the kale and Italian sausage shine in this dish. This is an easy recipe to make and delivers big flavor! Ingredients: 1/3 cup olive oil 2 sprigs rosemary 8 ounces spicy Italian sausage, casings removed 1 (15.5-ounce) can cannellini beans, drained 1/4 cup dry white wine 12 ounces rigatoni Kosher salt 8 cups (lightly packed) torn kale 3/4 cup finely grated Parmesan, divided Freshly ground black pepper 2 tablespoons unsalted butter Directions: 1. Heat oil in a large Dutch oven over medium-high heat. 2. Fry rosemary in oil (1-minute per side). 3. Transfer to a paper towel to drain. 4. Add sausage to the Dutch oven, breaking up with a wooden spoon and stirring until browned and cooked through (8-10 minutes). 5. Transfer with a slotted spoon to a plate. 6. Add beans to pot and cook (4-5 minutes). 7. Transfer 1/2 of the beans to the sausage plate. 8. Add wine to pot, bring to a boil and cook until liquid is almost evaporated (2-minutes). 9. Cook pasta in a large pot of salted water. Undercook by 3-minutes less than the package directions. 10. Using a slotted spoon transfer to pot with beans and kale and 1 cup pasta cooking liquid. 11. Cook tossing often until kale is wilted, pasta is al dente and sauce is thickened (4-minutes). 12. Add another 1/4 cup pasta cooking liquid, then add 1/2 cup cheese, tossing until melted and dissolved. 13. Thin with more pasta cooking liquid if needed. 14. Season with salt and pepper. 15. Add butter and toss to combine, then mix in reserved sausage and beans. 16. Crumble rosemary over top and sprinkle with remaining 1/4 cup cheese and serve. Wine Pairings: We preface all of our wine pairing suggestions by letting you know that it’s really a matter of personal taste. While we do offer our opinions and why we selected a specific varietal, there is no right or wrong answer when pairing a wine with your dinner. Today the term can include slow cooking meats on the stove or slow cooker. Our Slow Cooker Beef Barbacoa recipe, takes a cheap cut of meat and turns it very tender and succulent in the slow cooker. We use smoky chipotles, beer, oregano and cinnamon to flavor this shredded beef dish for your tacos, nachos or burritos! Ingredients: 2 tablespoons olive oil One 3-pound boneless beef chuck or rump roast Kosher salt 3.5 tablespoons ancho chili powder 6 garlic cloves, peeled 1 tablespoon apple cider vinegar 1 tablespoon dark brown sugar 2 chipotle chilis in adobo 1/2 teaspoon Mexican oregano 1/4 teaspoon ground cinnamon 1 bottle (12 ounces) Negra Modelo beer Directions: 1. Heat oil in a large skillet over medium-high heat. 2. Pat dry beef with a paper towel and season all sides with salt. 3. Brown in hot oil on all sides (10-minutes total). 4. Once done, add meat to slow cooker. 5. In a food processor add ancho powder, garlic, vinegar, sugar, chipotle, oregano, cinnamon, 1-cup water and blend. 6. Cover meat with blended mixture. 7. Stir in the beer, cover and cook on HIGH for 6-hours. 8. Remove meat from and place a cutting board to cool. 9. Add slow cooker juices to a sauce pan and boil over high heat to concentrate the flavors, then season with salt. 10. Shred beef using two large forks. 11. Add shredded beef to a large plate or serving bowl and ladle in the concentrated juice to keep the meat moist. Wine Pairings: We preface all of our wine pairing suggestions by letting you know that it’s really a matter of personal taste. While we do offer our opinions and why we selected a specific varietal, there is no right or wrong answer when pairing a wine with your dinner. Beaujolais Nouveau Wine This Slow Cooker Beef Barbacoa recipe has flavors of beef, but is actually lightened by the ancho, chipotle and cinnamon. While these flavors are robust a heavier red wine is too overpowering. For this dish I prefer a light red wine. A Beaujolais Nouveau is a young fresh red wine that is meant to be enjoyed young.
[…] This Spinach Fettuccine Carbonara recipe combines the dynamic duo of spinach and bacon in this pasta dish. It is an easy recipe to make, in a short amount of time that is big on flavor! Ingredients: Kosher salt 1 pound chopped bacon 1 pound fettuccine 1 whole egg, plus 2 large egg yolks at room temperature 1 cup grated Parmigiano-Reggiano cheese 2 heaping teaspoons freshly cracked black pepper 2 cups baby spinach leaves Shave parmesan cheese Directions: 1. Bring a large pot of salted water to a boil. 2. In a large high sided skillet, or Dutch oven; cook the bacon over medium-high heat until crisp (around 10-minutes.) Remove from the heat and reserve bacon in the pan. 3. Cook the pasta according to the directions (around 12-minutes.) 4. In a small bowl whisk the egg and yolks, 1 cup cheese and pepper. 5. When the pasta is almost done, return the bacon and pan to medium-heat. 6. Add 1/2 cup pasta cooking water into the egg and cheese mixture, and whisk until it’s loosened. 7. Reserve some additional cooking water and then drain the pasta. 8. Add the pasta to the bacon and pan and toss. 9. Slowly drizzle in the egg and cheese mixture evenly coating the noodles. If pasta looks dry, add additional pasta water. 10. Add spinach to the pan and toss until combined. 11. Transfer the carbonara to a serving bowl and top with shaved Parmesan. Wine Pairings: We preface all of our wine pairing suggestions by letting you know that it’s really a matter of personal taste.
